Shadrak's Sake Vongole

I fondly remember Kijani Hotel from when I was growing up in Shella, I was at school with the daughter of the owner and we spent many hours playing in the pool or running around the gorgeous garden. So I was absolutely over the moon to hear two of my great friends were to take it over, I knew Trish and Abdul would do wonders! One of the aspects I was most excited about was Trish's dishes, she is an incredible kitchen creative who draws from the wonderful cuisines of the world for her menu's. When Shadrak joined the kitchen team he came with aspirations to become a chef, with Trish's guidance he has succeeded and what they produce together is unmissable.

Now when I visit Lamu, Kijani is a must, at least once..... often more than! This dish in particular was so tasty I had to go back the next day to have it again. Wonderful clean flavours, simple combinations working in harmony, achieving that sort after umami. It was so tasty I had to make a little video to share this recipe, of course nothing beats the real thing so when your next in Lamu I highly recommend giving Kijani a visit.
