Duck Pho

Wondering what to do to change up that leftover Peking Duck you just couldn't finish? This Vietnamese soup is the perfect solution, it definitely was a hearty breakfast for us on this cold Nairobi morning



Hearty & Spicy Duck Pho


When you wake up on cold, wet morning, sometimes that healthy smoothie just won’t cut it to kick start your day! This morning we decided to go for a warming Vietnamese breakfast noodle soup. These soups are great because they are so versatile, we chose to make a Duck Pho as we had some delicious left over Peking duck, but they can be made with any sort of meat, fish or veggies.


As this was a Duck Pho, Jah decided to go for delicious spices that work great with both Duck and Pork. This recipe is very simple and can be altered to taste; we like ours quite spicy to help tackle the sniffles common at this time of year.


  1. Get some water in a sauce pan and on the heat, then add fresh ginger, garlic & chilli, along with chinese five spice, soy sauce, hoisin sauce and a splash of mirin.

  2. Now add the shredded duck, with bones if you have, and your choice of veggies, we had carrot & onion; sadly we had no mushrooms as they would have been a wonderful addition too!

  3. Then you just let that bubble away nicely while you prep your noodles and boiled egg, if you are adding them.

  4. Once it has reduced enough, season it to taste, serve and garnish with some fresh herbs, we used mint and corriander.
